Il Modicano - Rough ground chocolate

This ancient Aztec recipe was acquired and perfected in Modica during the period of Spanish domination, in the XVI century. Il Modicano Raw Chocolate is made by mixing high-quality pure ingredients at low temperature (max 40°), excluding the conching phase. The cocoa mass is mixed with raw cane sugar, without emulsifiers or other additives.
Thanks to this slow and long "cold process" the sugar crystals remain intact, giving the final product a granular and rough texture.
Now, for the first time, an organic version is available!
